I did it! I made the African rice that my sister-in-law taught me (the same kind served at our wedding). It was pretty darn good for my first time making it by myself. It was a lot of work ... aside from preparing the tomato sauce, mixing everything, baking, stirring and baking more, I had extra laundry to do. When I had the mix coming to a boil the lid flew off the pot and splattered everything on my curtains, stovetop, floor, walls, etc. It was worth it. My husband thought it was excellent and I'm planning on another batch this weekend!
